Milkfish is abundant in southeast Asia, especially the Philippines, but also in my home country of Taiwan. As a child, my mom would salt milkfish overnight and simply pan-fry it to a crisp. Because milkfish is much bonier than other fish, my sister and I would mainly eat the belly which has no bones.
